The best choice is coffee that is shade-grown (maintains rain forest), organic (forbids chemical use), and fair-traded (assures a fair price to the farmer).
Shade-grown coffee does not require harmful pesticides and fertilizers like sun grown coffee; the forest canopy provides habitat for the birds and insects that devour coffee-plant pests, and many native plants add nutrients to the soil.

Several of the largest U.S. coffee retailers, have started offering coffee that is shade-grown, organic, and fair-traded.
The taste of Organic Coffee is naturally more rich and flavorful than that which is grown on large plantations. Coffee grown in the shade as naturally intended develops more flavor because the beans ripen slower. This allows more natural sugars to develop inside the bean, thus giving a richer flavor.
